The original one,the lower picture with the toast, was called the All Souls Breakfast Salad (name after the local Episcopal Church) has Spinach, Chopped bacon, dried cranberries, dry blue cheese crumbles, tomatoes and 2 eggs any style with crusty home baked bread. Poached eggs just seemed right to us. Of course a mysterious house dressing.
Donna's variation was Romaine lettuce, dried cranberries, tomatoes, walnuts, crumbled feta cheese and the 2 poached eggs. Donna's mysterious dressing is olive oil, 2 to 1 balsamic, a little water, sweetener (or sugar) salt and pepper to taste and garlic (but not on this salad).
She has been so supportive, helping me to loose 30 lbs and 6.5 inches off my waist....at 70 years of age. ;-)>
